Shrimp Processing

In order to ensure the highest quality shrimp, Camaronera Muro Bonito processes its shrimp at Sahlman Seafoods (www.sahlmanseafood.com) which is Nicaraguaīs most reputable processor. Sahlman meets USA and European seafood export regulations and is supervised and licensed by both governing bodies. Sahlman also provides Muro Bonito with technical support during the harvest ini order to maximize the quality of the shrimp.

The bins from the harvest are brought into the processing plant and the shrimp are transfered to a frozen water bin.

The shrimp are then transfered through an automatic belt for the evaluation of their condition and elimination of any secondary objects such as grass that may have been missed in the preliminary harvest cleaning.

The condition of every shrimp is analized to ensure that only high quality shrimp are packaged. Any shrimp that may have suffered damage during the harvest will be removed.

Once the shrimp have been sorted by weight, a final and more detailed screening of shrimp quality is done prior to packaging.

The packaging is done according to the customerīs request. Typically in five pound bags within labeled boxes.

A small sampling of our final product. In this harvest we produced 121,000 lbs of shrimp. 70% was sold to Spain and France head-on while 30% was sold to the United States head-less.
